🎯 Winemaking Goal
Monitor daily Alcoholic Fermentation (AF) kinetics on lot C03 - 26-SAUV-FA: log daily density, temperature, and cooling setpoint (Setpoint °C) from the lot sheet or via the cellar-wide Bulk AF Entry modal, record yeast nutrition (Fermaid E) and oxygenation (5 mg/L), and inspect the color-coded intervention markers directly on the interactive AF curve.
✅ Prerequisites
- Lot
26-SAUV-FA(140 hL, Sauvignon blanc) is active in tankC03with statusFermenting.
🛠️ Step-by-Step Instructions
Step 1 — Log Daily Density, Temperature & Cooling Setpoint (Setpoint °C)
- Open the lot sheet
C03 - 26-SAUV-FA(Trackingtab). - In the
New AF readingcard on the right:- Enter
Density(e.g., progressing over 6 days from1082→1068→1050→1034→1022→1014 g/L). - Enter
Temp.(15.5 °Cto17.2 °C, then16.4 °C). - Enter
Setpoint °C(16 °C). - Select any sensory aroma note (e.g., Slight reduction) and click
Confirm.
- Enter
- The
Alcoholic fermentation curveplots three series simultaneously:- Solid purple line: Density (
g/L). - Dashed orange line: Must temperature (
°C). - Horizontal dashed blue line: Cooling setpoint (
16 °C).

Step 2 — Use the Cellar-Wide Bulk AF Reading Entry
- During the morning tank round, open the
Bulk AF readingsmodal from theDashboard(/). - Enter Density, Temperature, and Cooling setpoint (or flag valve position) across all fermenting tanks in a single table—or use
CSV Import/OCR Scan—and clickConfirm all.
Step 3 — Record Nutrition & Oxygenation with Interactive Curve Markers
- On
C03 - 26-SAUV-FA, click the purpleJob(Travail) button in the top right:- Nutrient addition at d = 1068: select
Nutrition, choose stock itemFermaid Eat30 g/hL(4.2 kgautomatically deducted from stock for140 hL), and save. - Oxygenation at d = 1050: select
Oxygenation, enter5 mg/Lin the built-in calculator (700,000 mg/0.49 LO₂ gas for140 hL), and clickSave.
