🎯 Winemaking Goal

Manage pre-fermentation juice clarification on a rosé or white must: monitor Cold stabulation (4 °C) in tank C10 (26-SYR-ROSE-STAB), record pectolytic Enzyme addition (Lafazym CL), execute the Settling (Débourbage) racking movement from C10 to C11 while accounting for lees loss, and log the resulting Turbidity (85 NTU) analysis.

✅ Prerequisites

  • Lot 26-SYR-ROSE-STAB (220 hL, free-run Syrah Rosé, IGP Rosé) is in tank C10 (300 hL) with status Cold stabulation and cooling setpoint 4 °C.
  • Destination tank C11 (300 hL) is clean and empty.

🛠️ Step-by-Step Instructions

Step 1 — Monitor Tanks in Cold Stabulation from the Dashboard (/)

  1. On the Dashboard (/), click the Tanks in stabulation KPI card.
  2. Inspect tank C10 (26-SYR-ROSE-STAB, 220 hL), its current temperature (4.5 °C), its cooling setpoint (4 °C), and stabulation duration.
  3. Open the lot sheet and click Job to log Enzyme addition (Lafazym CL at 3 g/hL, automatically deducted from stock).

Step 2 — Execute the Settling (Débourbage) Movement from C10 to C11

  1. Open 26-SYR-ROSE-STAB and click the purple Movement button.
  2. In the New movement wizard:
    • Select movement type Settling (Débourbage).
    • Source tank: C10 (220 hL).
    • Clear racked volume: enter 210 hL into Destination tank C11.
    • Lees loss (10 hL): declare the 10 hL of heavy lees discarded so tank C10 is automatically freed (0 hL).
    • New lot status: Settled / Settling.
  3. Click Confirm movement.

💡 Good to Know / Oenologic Automatism (Genealogy & Tank Release) Racking 210 hL of clear juice from C10 (220 hL) into C11 preserves the lot's entire history (vineyard origin, enzyme addition, cold readings in C10), updates the active volume to 210 hL in C11, records the 10 hL lees loss in the cellar register, and automatically marks tank C10 as Free.

Step 3 — Log the Clarity Analysis (Turbidity = 85 NTU)

  1. On C11 - 26-SYR-ROSE-STAB (210 hL), scroll down to Laboratory analyses and click + Manual entry.
  2. Enter 85 in Turbidity (NTU) and click Save.
