Red Winemaking, Barreling Down & Malolactic Fermentation — MLF

🎯 Winemaking Goal

Track a macerating red lot (26-SYR-MAC in concrete tank B20), perform Barreling down (Entonnage) of 13.5 hL into a 6-barrel group (Syrah élevage barriques), inoculate lactic acid bacteria (VP41), and monitor Malolactic Fermentation (MLF) via laboratory imports until automatic transition to MLF Done (Terminé).

✅ Prerequisites

• Lot 26-SYR-MAC (180 hL Red Syrah in concrete tank B20, MLF desired: Yes) has finished alcoholic fermentation (d = 1002).
• Barrel group Syrah élevage barriques (6 barrels × 2.25 hL = 13.5 hL) is free.

🛠️ Step-by-Step Instructions

Step 1 — Barrel Down (Entonnage) from Tank B20 into the 6-Barrel Group

1. Open B20 - 26-SYR-MAC and click the purple Movement button.
2. Select Barreling down (Entonnage):
   • Source tank: B20 (180 hL).
   • Destination: select the barrel group Syrah élevage barriques (6 barrels × 2.25 hL = 13.5 hL).
   • Volume: enter 13.5 hL (Free-run / Gouttes). Oenologic distributes 2.25 hL into each of the 6 barrels while keeping 166.5 hL in B20.
3. Confirm the movement: on B20 - 26-SYR-MAC, the Lot genealogy panel now lists Child lots from this lot: 26-SYR-MAC – Syrah élevage barriques (Free-run) · 13.5 hL.

Step 2 — Import Malic & Lactic Acid Lab Results

1. After logging MLF inoculation (Lalvin VP41 at 1 g/hL), click Import in the Laboratory analyses section.
2. In the Lab import modal, import or enter the malic/lactic progression for Syrah élevage barriques:
   • Malic acid: 1.80 g/L → 0.40 g/L → 0.05 g/L.
   • Lactic acid: 0.85 g/L.

Step 3 — Monitor All Lots in the Tanks in MLF Dashboard View (/?section=fml)

1. On the Dashboard (/), click the Tanks in MLF KPI card (12 tracked lots: 6 waiting and 6 done).
2. The view splits into two clear sections:
   • Waiting · 6 lots: PRESTIGE-01 (0.58 g/L), B20 (166.5 hL), B16 (2.1 g/L), C15 (2 g/L), C14 (2.5 g/L), C02 (2 g/L).
   • Done · 6 lots: at the top appears Syrah élevage barriques · badge 6 BARR. (13.5 hL, Malic 0.05 g/L, Lactic 0.85 g/L), followed by B17, B19, B18, C09, and C13.
